● Summary:Dark and inky in the glass which immediately tells a bit ofa story about the intensity of this wine. The nose is pretty butnoshrinkingviolet -though it does smell a bit like violets. Violets and plums withjust enough oak to add a further dimension.The wine' s impossibly soft, juicy, silkyk and seamless. I s rich,it s round,it s long, it s velvety. It s reall, reallydelightfult s delious.The product of a perfect vintage and blended from 5 different vineyards, all but one from thenorthern part of the Care Valley. The grapes were pidked between the 1st and the 31st March, destemmed but the fruitretained as whole berries, and wild yeast fermented. Time on skins varied from 8- 28 days and after pressing the wineswere aged on lees for two years for depth, freshness and texture. A mix of French and American oak was used, with only16% of it new, There was no radking and the wine was bottled without fining or fitration.The obvious choice forhar-lilled venison, this is a wine with the depth and balance to give a long and happy life.
● Vinification:Fermented in stainless steel at approximately 24 degrees Celsius and left on its skins for 32 days. Pressed off skins anddirect to wood for maturation.
● Tasting Notes:Awine made fromgrapes grown in the Armagh and Stanley Flat sub regions ofthe Clare Valley. This wine is avery deep-colour and is bursting with aromas of plums, chocolate and spice. It is very long, nich and soft and has a fine and sillyfinish.
