● Vinification：Cabemet Sauvignon requires a cooler dimate and a longer growing season to reach its ultimate potential the dimate ofLanghorne Creek and the weather of 2014 worked in unison to give Cabermet everything it needed to succeed. Rainfallwas minimal during the growing season and temperatures were moderate. The fruit was crushed into small open fer-menters and left on skins to macerate for a number of days prior to fermentation. The wine underwent its malolactictransformationin oak, was then racked and retumed to French and American oak for a 12month maturation. Blendingwas completed just prior to bottling.
